Handmade tortillas

for my American friends,  just to help you realize the difference between what is served as Mexican food at TacoBell and what you actually eat in México is totally different.

Here are tortillas made by hand on the spot at a "Comida Corrida" place.
They are really tasty and the smell is awesome.

Notice how they inflate during cooking, just like a hot air balloon, but they immediately deflate back when removed from the heat.

In some big restaurants they have on the premises an automated machine that does all the process in a conveyor belt, but the flavor of course is not the same.
I prefer the places, big or small where a person is doing it by hand.

¡Buen provecho!
